Ingredients 1 boned chicken breast (or thigh cut into 8 pieces) 2 onions, finely chopped 1/2 cup corn oil 2 cloves crushed garlic 1-1/2 tsp bezar - Arabic spice mix(available at all major supermarkets) Salt to taste 2 tomatoes, chopped 2 potatoes, cubed 1 carrot, finely chopped 1 bunch chopped coriander 6-8 cups water 1 tsp turmeric 1/2 tsp ground cinnamon 1/2 tsp ground cardamom 2 whole loomi or dried limes 1 tbsp tomato paste 2 tbsp loomi – chopped Preparation Heat olive oil in a large pot and add chicken,onion,bezar and salt. Brown the chicken on all sides,add spices,garlic and loomi. Fry for five minutes on medium heat and then increase heat and add all the remaining ingredients,except the coriander,along with water and salt to taste. Boil slowly until the chicken and vegetables are soft. Serve with white rice and salad,and garnish with fresh coriander.
