Prep time: 1 hour Cooking time: 15 mins Serves 4 Ingredient 4 large chicken breasts, on the bone 1/3 cup : virgin olive oil 2 limes, juiced 1/3 cup : fresh coriander, chopped 2 cloves garlic, finely chopped 4 ripe tomatoes, peeled, seeded, and chopped 1 green bell pepper, cored, seeded and chopped 1 small red chilli, cored, seeded and chopped 4 lime wedges, for serving salt and freshly ground pepper Preparation 1. Score chicken breasts with a sharp knife and place in a glass dish. Mix together oil, lime juice, coriander and garlic. Pour half the mixture over chicken, cover and marinate at room temperature for 1 hour. 2. Meanwhile, to make salsa, combine remaining marinade with tomatoes, bell pepper and chilli. Season to taste, cover and chill. 3. Barbecue chicken for 5-8 minutes on each side until tender, brushing occasionally with marinade from the dish. Serve hot with lime wedges and salsa.
